Spinach and Ricotta Cauliflower Crust Pizza




Deliciously Healthy Spinach and Ricotta Pizza on a Cauliflower Crust



Ingredients:



1 medium head of cauliflower, riced

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

2 cups fresh spinach, chopped

1/2 cup marinara sauce

1/2 cup shredded mozzarella cheese (for topping)

Fresh basil leaves for garnish



Directions:



Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

To make the cauliflower crust, remove the leaves and stem from the cauliflower and cut it into florets. Pulse the florets in a food processor until they resemble rice.

Transfer the riced cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.

In a large bowl, combine the riced cauliflower, 1 cup mozzarella cheese, ricotta cheese, Parmesan cheese, egg, oregano, garlic powder, salt, and pepper. Mix until well combined.

Spread the cauliflower mixture onto the prepared baking sheet, shaping it into a round pizza crust about 1/2 inch thick.

Bake the crust in the preheated oven for 25-30 minutes, or until golden brown and firm.

Remove the crust from the oven and spread marinara sauce evenly over the top. Sprinkle with chopped spinach and the remaining mozzarella cheese.

Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Garnish with fresh basil leaves before slicing and serving.
